Okra Salad


Scot's Aunt Brinda prepared this dish for a church potluck a few weeks ago. I could have made a meal off it. It's wonderful! I had her email the recipe to me.


Okra Salad

1 1/2 pounds breaded okra fried brown and drained ( may use more okra if you want a big salad.)
2 large tomatoes chopped
1 green pepper
1 bunch green onions (I use blades and all)
6 slices bacon fried crisp and crumbled
dressing
1/2 cup oil
1/4 cup sugar
1/4 cup white vinegar
Heat this until sugar is melted. Cool slightly.
I fry my okra and put it on paper towels to drain. Then I chop all the other ingredients together and pour the heated dressing mixture over it. I toss the okra in last. Can be made a few hours ahead of time to eat but won't be good made the night before it is to be eaten because the okra will get soggy....enjoy.

I was reading your profile and saw that you have a dog named Snick. I have a cat named Snick (or he has me!) I like to call him St. Snick because whenever we have people over to pray, he perches in my lap as still as he can be. I LOVED my Mother's fried okra! That sounds like a yummy dish! Oh MY!! This sounds wonderful!! Fried okra is a favorite of ours. My kids resist change, but I may have to spring this one on them!!

Sounds good. Although I'm not really crazy about okra myself, the rest of our family loves it. I have been trying to not fix it much cause hubby doesn't need to eat many fried things. Might try this for a special occassion.

Hope you had a great weekend and that it wasn't too soggy. Thought about ya'll yesterday and wondered how the big 50th anniversary for your in-laws was going.

Looks and sounds delicious! What I wouldn't give for some good southern fried okra. No okra here... maybe once in a blue moon, in the frozen section. We miss it sometimes, especially friend with green tomatoes:)

Can you believe they DON'T eat okra up here(or fried green tomatoes). Crazy people :)
